Spinach and Eggs in a Pan

When Suraya sent me the picture of her lovely breakfast, I just had to get the recipe. Can’t wait to try it. Looks so yum!! screenshot_20170111-103113

Ingredients:

  • 1 Bunch Spinach or Swiss Chard
  • 1 Onion
  • Salt
  • Pepper
  • Paprika
  • Tbsp Butter
  • Eggs (3 – 4)

Method:

Braise onion until brown with butter & salt. Add spinach and stir through. Cook for about 2 minutes. Make random holes in the pan. Now put small blob’s of butter into the holes. Break the eggs into the holes and cook with lid on till egg is set
