Creamy Butternut Soup

Made butternut soup yesterday and I was extremely impressed at the way it came out. I always seemed to struggle with finding the right ingredients to put inside to make it tasty and eventually came up with my own recipe (Looked at a lot of recipes and stole some ideas).
1 Onion
1 Tablespoon Butter
1 Tsp Crushed Chillies
1 Butternut Chopped into Blocks
1 Apple (Peeled and Cut into Blocks)
3 Carrots Chopped into Blocks
2 Medium Sweet Potatoes Chopped into Blocks
2 Cups Chicken Stock
1 Cup Water
½ Teaspoon Peri -peri


Some Black Pepper
250ml Cream
Cut your onion into fine pieces and braise in butter with crushed chillies for 3mins (Onion shouldn’t be brown).
Add 2 Cups of Chicken Stock to pot.
Add butternut, carrots, sweet potatoes and apple with water into the pot with pepper and peri-peri.
Let boil on low until veggies are very soft (30 – 40 minutes).
Add Cream (For a healthy version don’t add any cream)
Puree with a hand blender to make soft and creamy.
Garnish with coriander.
