After Numerous attempts to try and make éclairs I have finally found the perfect recipe that works.
½ Cup Fish Oil
1 Cup Hot Water
1 Cup Cake Flour
1 Tsp Baking Powder
Pinch of Salt
Add fish oil and water to pot and bring to a boil.
Remove from stove and Add Sifted flour, salt and baking powder stirring quickly when added. (I usually prep this in a bowl before the time)
Stir until a ball is formed.
Let cool until no steam is visible.
Once cooled, add one egg in at a time stirring after each addition
Spoon mixture onto a greased tray in little balls (Use a teaspoon for small, and a tablespoon for large)
Bake on 180C for 30mins or until golden brown.
Image: These are the éclairs I made. I used a teaspoon of the mixture as I did not want them to be too big.
Filling: I filled the éclairs with caramel, banana,
cream and topped it with Cadbury chocolate. (You can use anything you like)
